Fish Chunks with Vegetables (Gluten Free)

Delicious, light and so easy to make, this recipe became one of my favorite fish recipes nowadays.

The combination of spices and herbs in this dish, create a unique flavorful combination.

You can serve it with steamed Basmati rice, mashed potatoes or pasta.  I usually have it plain, and it is superb!
Fish Chunks with Vegetables
Serves 6

1kg fish fillet (boneless)
2 tbsp olive oil
2 medium zucchini
1 red pepper
1 spring onion
1 tbsp dark soy sauce or tamari sauce
1 tbsp dry oregano
1 tbsp dry thyme
1 tsp sweet paprika
Salt and Pepper to taste

1) Cut fish fillet into chunks and cook it with 1 tbsp of olive oil for 6-7 minutes. Set aside.
2) Cut vegetables into strips or small pieces, and cook with 1 tbsp of olive oil for 3-4 minutes.
3) Combine fish and vegetables; add the dry herbs and season with salt, pepper and paprika. Finally add soy or tamari sauce and stir gently.
4) Serve hot.
