Fish Chunks with Vegetables (Gluten Free)

Delicious, light and so easy to make, this recipe became one of my favorite fish recipes nowadays.

The combination of spices and herbs in this dish, create a unique flavorful combination.

You can serve it with steamed Basmati rice, mashed potatoes or pasta.  I usually have it plain, and it is superb!

Fish Chunks with Vegetables
Serves 6

Ingredients
1kg fish fillet (boneless)
2 tbsp olive oil
2 medium zucchini
1 red pepper
1 spring onion
1 tbsp dark soy sauce or tamari sauce
1 tbsp dry oregano
1 tbsp dry thyme
1 tsp sweet paprika
Salt and Pepper to taste


1) Cut fish fillet into chunks and cook it with 1 tbsp of olive oil for 6-7 minutes. Set aside.
2) Cut vegetables into strips or small pieces, and cook with 1 tbsp of olive oil for 3-4 minutes.
3) Combine fish and vegetables; add the dry herbs and season with salt, pepper and paprika. Finally add soy or tamari sauce and stir gently.
4) Serve hot.

  13. I always have used beef or chicken with stir fried veggies, however the fish does sound like a great idea. Fresh fish would make it a more healthy meal. Also, I noticed there is a little bit of fusion going on with the italian spices and the soy-definitely a mix I need to try. Well done!

    This is a beautiful tasty dish. I tried it and it tasted as good as it looked. Fish is a very important dish,an excellent source of Omega-3 fatty acids and lot sof other vitamins. All these vegetables add an extra flavour and even more nutrients. I'm guessing that whoever you are cooking for, they very happy.

Mickey Mouse Birthday Cake

This cake was made for Demetris, an adorable two year old boy!  I hope he likes it. His mother told me that he likes Mickey Mouse very much!
Here you can see the cake decoration steps.  I used buttercream, in order to make the surface of the cake smooth.

This cake took me 3 hours to decorate it. The black part was the hardest to finish. I used wilton's black decoratcing icing. Happy Birthday Demetri!!!
