Cake with Apple, Banana and Carrot
Ingredients 2 apples 1 banana 1 carrot 1/3 cup sunflower oil 2 medium eggs 1 cup granulated sugar 2 cups all purpose flour, sifted 2 tsp baking powder 1 sachet vanilla sugar ¼ ground cinnamon A pinch of ground cloves
Preparation Method 1) Preheat the oven at 170ºC. 2) In a food processor, process the apples, the banana and the carrot. 3) In a large bowl mix the rest of the ingredients along with the fruit and the carrot puree. 4) Bake for 50 minutes. 

Double Chocolate Pudding with Stevia

No Sugar added, Double Chocolate Pudding with Peach Compote.  Perfect for summer! -----------------------------------------------------------------------------------------
Double Chocolate Pudding with Stevia
Ingredients 3 cups milk (1.5% fat) 1 tbsp unsweetened cocoa powder, sifted 4 tbsp corn flour, sifted 40gr chocolate (74% cocoa solids), finely chopped 1 tsp of vanilla essence 2½ tbsp of Stevia sugar 3 peach compote, in light syrup, cut into small cubes
Preparation Method 1) In a small saucepan put the milk, cocoa powder and corn flour. 2) Bring to a boil, stirring constantly, until the mixture thickens. 3) Remove from heat. Mix in chocolate, vanilla essence and Stevia sugar. 4) Poor mixture in a bowl. Refrigerate over night. 5) Serve chocolate pudding with peach compote.

You can find the recipe here. From the original recipe I changed the following: 1) The size of the pie (I made a larger one). 2) I used 300gr digestive biscuits because of the size. 3) 125gr of butter. 4) Three large bananas. 5) 200gr of fresh cream.

American Mud Cake for Demetri's Birthday

On the 21st of March 2014, my husband Demetris, celebrated his birthday. This, was his birthday cake. 

Our daughters decorated the top of the cake with Wilton edible decorations.

Raspberry Tart

Hello everybody!  It has been a while since my last post.  Well, on the 7th of January 2014 I gave birth to a cute little boy!!! I will not be able to post regularly for some time, but I hope I will manage to return to my kitchen soon... ------------------------------------ 
Raspberry Tart
Base Ingredients 300gr all purpose flour 200gr cold butter 100gr icing sugar 1 egg 2 tbs fresh orange juice
Filling Ingredients 500gr raspberries 6 tbs sugar 2 tbs butter
Preparation Method 1. Preheat oven to 170ºC. 2. Mix all base ingredients. Refrigerate for half an hour and then roll to a sheet. Leave 1/4 of the dough for the top. 3. Bake tart base for 20 minutes. 4. Mix all filling ingredients and cook in a saucepan until the liquid reduces to half. 5. Poor filling on top of the base. Add the rest of the dough on top (see photo), and bake for another 15 - 20 minutes.
