New York Cheesecake with Homemade Cherry Sauce

If you like cheesecake and cherries you have to try this recipe.  
For years I was trying to find the perfect Cheesecake recipe but none seemed to taste right. Recently I came across a recipe from BBC GoodFood that really made the difference. 
The only change I made was to discard the sour cream, and instead of that to use homemade cherry sauce.

Homemade Cherry Sauce

Ingredients
500gr cherries, pitted
275gr caster sugar
1 tbsp glucose
2 tbsp freshly squeezed lemon juice
1 tbsp butter
2 tsp corn flour, dissolved in a little cold water 

Preparation Method
1) In a medium sauce pan add cherries, sugar, glucose and lemon juice. Bring to a boil a reduce head to medium. Continue cooking for 7 minutes. 
2) Add butter. Stir well. 
3) Then add corn flour and cook for another 2 minutes.
4) Allow to cool completely before using it.

You can also use this Cherry Sauce Recipe in ice creams, puddings, cakes etc.
