"More Than A Greek Salad" by Ivy Liacopoulou

"I have the pleasure to announce that my second cookbook has just been published on  "The Amazon Kindle."

The cookbook is divided into three sections. 1) The first section covers useful information about the Mediterranean Diet, which in fact is not a diet but a lifestyle approach which leads to long, healthy lives with less chance of chronic disease.
2) The second section showcases those Greek recipes which are based on the Mediterranean Diet.
3) The third section consists of a Diet Plan based on the recipes of the cookbook, from which you can choose what to eat.

Light Cream with Yogurt and Peaches

A light cream with milk and yogurt. Healthy and easy to make. A perfect dessert for summer. ----------------------------------------- Light Cream with Yogurt and Peaches
Ingredients 820gr Peach halves in syrup (6 large halves) 20gr powder gelatin ½ cup cold water ½ cup hot water 1 cup Greek type yogurt (2% fat) 2½ cups light milk (1.5% fat) ¾ cup fructose sugar 1gr mastic powder ½ cup peeled almonds, roughly chopped
Preparation Method 1. Discard syrup. Cut into thin slices the peach halves and lay half of those into a large round bowl. 2. Sprinkle gelatin over the cold water and allow to stand for 10 minutes. Then add the hot water and allow gelatin to fully dissolve. 3. Whisk yogurt, milk, fructose sugar and mastic powder until you get a smooth light mixture.
4. Add dissolved gelatin into the yogurt mixture and mix well. 5. Add almonds; refrigerate over night.
6. Decorate cream with the rest of the peaches and serve.

New York Cheesecake with Homemade Cherry Sauce

If you like cheesecake and cherries you have to try this recipe.   For years I was trying to find the perfect Cheesecake recipe but none seemed to taste right. Recently I came across a recipe from BBC GoodFood that really made the difference.  The only change I made was to discard the sour cream, and instead of that to use homemade cherry sauce. Below you will be able to find the cherry sauce recipe. You can find the original cheesecake recipe here. ------------------------------------------
Homemade Cherry Sauce
Ingredients 500gr cherries, pitted 275gr caster sugar 1 tbsp glucose 2 tbsp freshly squeezed lemon juice 1 tbsp butter 2 tsp corn flour, dissolved in a little cold water 
Preparation Method 1) In a medium sauce pan add cherries, sugar, glucose and lemon juice. Bring to a boil a reduce head to medium. Continue cooking for 7 minutes.  2) Add butter. Stir well.  3) Then add corn flour and cook for another 2 minutes. 4) Allow to cool completely before using it. -------------------------------------…

Kellogg's Smacks Chocolate Bars

Ingredients 2 cups Smacks 1 cup melted chocolate 1 tsp honey Butter for coating the pan
Preparation Method 1. Coat a square pan with butter. 2. Mix all ingredients. 3. Place mixture in the pan. 3. Refrigerate over night. 4. Cut into pieces and serve! ----------------------------------------------

Cherry Upside-Down Cake (Extremely Easy to Make!)

This is an extremely easy recipe to make. You can substitute cherries with any other fruit that you like.  It is perfect with an ice tea, or a hot cup of coffee!! ------------------------------------------------------

Ingredients For the pan 40-45 cherries, pitted Butter and sugar for the pan
For the Cake 125gr butter ¾ cup granulated sugar 1 tsp vanilla sugar 2 regular eggs, lightly bitten ½ cup light milk 2¼ all purpose flour, sifted 2 tsp baking powder
Preparation Method 1. Coat a rectangular pan with butter; sprinkle with sugar and cover the bottom of the pan with cherries. 2. Preheat oven to 170ºC. 3. Melt the butter, sugar and vanilla in a medium sized saucepan. Remove from heat. 4. Add eggs and milk; mix well. 5. Stir in flour and baking powder and mix lightly. 6. Bake for approximately 40 minutes. ----------------------------------------------

Easy Flan
Ingredients 1 can evaporated milk 1 can sweetened condensed milk 150gr cream cheese, at room temperature 3 eggs 1 tablespoon pure vanilla extract Little butter for coating the pan 3 tbsp simple syrup for coating the pan 4 digestive biscuits, for decoration ¼ cup walnuts, for decoration

Preparation Method 1. Preheat the oven at 180ºC. 2. Coat a rectangular pan with butter. Then coat the bottom with syrup and let aside. 3. In a blender, combine the evaporated milk, condensed milk, cream cheese, eggs and vanilla. Blend on high speed for 30 seconds. Pour the mixture into the pan. 4. Cover with foil and bake in bain-marie for 50 minutes. 5. Let flan cool completely and let in the refrigerator over night.
6. Process biscuits with walnuts in a food processor, and sprinkle around flan just before serving.

Champagne Bottle Birthday Cake

Hello everybody! It's been ages since my last post... This cake was made for a special boy called Massimiliano. He is going to celebrate his birthday today. I hope that he and his friends, will have a great time!! Happy Birthday Massimiliano!
It is a triple fudge chocolate cake. The shredded "wood" was made with white chocolate.
The wood effect was made with edible color.

Homemade Gnocchi with Parmesan Cheese and Tomato Sauce! This dish is so easy to make, not expensive at all, but it is a bit time consuming.  ---------------------------------------- Homemade Gnocchi with Parmesan Cheese and Tomato Sauce
Ingredients Gnocchi 950gr potatoes, unpeeled, boiled and mashed 270gr all purpose flour 2 medium eggs A pinch of salt Parmesan Cheese 
Tomato Sauce 2 tbsp olive oil 1 tbsp Jack Daniel’s Barbeque Sauce 250gr canned tomatoes, chopped ½ cup boiled water 1 tsp dried oregano 1 tsp dried thyme Pinch of salt Pinch of black pepper

Burger Buns, with Olive Oil and Whole Wheat Flour

This is my first attempt in baking burger buns. The original recipe was with butter, unbleached all-purpose flour, 1/4 cup of sugar and 1 large egg.  I wanted to make them a bit healthier so part of the flour was organic whole wheat flour, and instead of using butter I used olive oil. I decreased the amount of sugar by 1 tablespoon as well.  I am very pleased with the outcome! The buns are light and pleasant to eat. Risotto with Prosciutto and Parmesan Cheese 4 Portions
Ingredients 100gr Prosciutto, cut into small strips 1 cup Arborio rice 1/3 red dry wine 2 cups hot water 1½ hot chicken stock 1/3 cup fresh cream 1/3 cup Parmesan cheese, grated

Preparation Method (Keep stirring the rice all the way until it is cooked) 1. In a medium pan, sauté Prosciutto for 5 minutes. 2. Add the rice and continue sauté for another minute. 3. Addthewineandcontinuestirringuntilthealcoholevaporatescompletely.  Continue by adding the water and then by adding the chicken stock, half a cup at a time. 4. Lemon Cake

Moist, easy to make and perfect with a cup of tea! ------------------------------------ Lemon Cake
130gr Lemon Puree

100gr Greek extra virgin olive oil

220gr caster sugar

250gr all purpose flour

2 tsp baking powder

3 large eggs

1/4 tsp ginger powder

Preparation Method
1) Preheat the oven to 170ºC (340ºF).
2) Mix lemon puree* and olive oil.
3) Whisk eggs and sugar until light and fluffy.
4) With a wooden spoon combine (1) and (2) above.
5) Sift flour, baking powder and ginger powder
together; add them in the lemon mixture and stir until 
just combined. Do not over mix. <
