Elegant Birthday Cake

This was a late birthday cake for a dearest friend who came from U.S. It was a Black Forest Cake, decorated with fondant. Sorry, no recipe for today, but you can use one of the following recipes which are equally delicious: 1. Red Velvet Cake

Spicy Nuts - Easy to Make

Delicious, but Not suitable for Diet!! Unfortunately I found out that after I ate... "quite a few".  I am sure you know what I mean...  Any way, give them a try. Don't forget the beer! -------------------------------------- Spicy Nuts
Ingredients 250gr raw almonds 250gr raw pecans or walnuts 1 teaspoon olive oil ½ teaspoon salt ½ teaspoon cayenne pepper 1 tablespoon Jack Daniel’s Barbecue Sauce
Preparation Method 1) In a big saucepan (30cm), sauté all ingredients besides nuts, for half a minute. 2) Add nuts and continue cooking for 5’ minutes, starring continuously. 3) Allow to cool completely before serving.

Sponge Red Velvet Cake with Cream Cheese and Mascarpone Cheese Frosting

This was the first Red Velvet Cake I ever made.  I usually use fondant or fresh cream to decorate my cakes, but this time I decided to use something different. 
I used two different kind of cheeses, plus fresh cream of course!  Cream cheese and Mascarpone cheese are a very nice choice when frosting cakes, so this recipe had a combination of both.
Since I am still on a diet I did not taste the cake, but as I was told it was very good, especially the frosting! Below you can find the recipe I used.   -------------------------------------
Sponge Red Velvet Cake with Cream Cheese and Mascarpone Cheese Frosting
Ingredients Sponge 180gr caster sugar 5 medium eggs (room temperature) 1 tablespoon red food color 120gr all purpose flour 10gr unsweetened cocoa powder 1 teaspoon baking powder
Syrup 100ml water 100gr sugar 1 tablespoon black Cuban rum
Frosting 250gr cream cheese (room temperature) 200gr mascarpone cheese (room temperature) 150gr icing sugar (sifted) 1 teaspoon strawberry extract 500gr fresh cream

Knights Castle Birthday Cake (No2)

This was the 2nd Castle Birthday Cake I made.  The first one was square and you can find it here.  The cake decoration was made with fondant icing.  This was the main chocolate cake, covered with fondant.

Chocolate Cake with Ganache Glaze

I love chocolate in all its forms.   This recipe is dedicated to all chocolate lovers! Enjoy! ---------------------------- Chocolate Cake with Ganache Glaze
Ingredients 3 medium eggs
200g butter (chopped) 300g caster sugar 90g plain flour
130g self-raising flour
1/4 teaspoon bicarbonate of soda
50g cocoa powder 200g Greek style yogurt
1 teaspoon vanilla extract
Chocolate Glaze
200g dark eating chocolate (chopped) 100g fresh cream
20g butter

Preparation Method
1. Preheat oven to moderate (150ºC fan-forced). Grease 24cm bundt pan well.
2. Beat butter and sugar in medium bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating until just combined between additions; stir in combined sifted flours, soda and cocoa in two batches. Then add yogurt and vanilla extract.
3. Spread mixture into pan; bake about 1 hour 10 minutes. Stand cake 5 minutes; turn onto wire rack to cool.
