Tasty Bites with Homemade Anari/Ricotta Cheese (Gluten Free)

In my previous post I described how you can make the cheese.  Well, in this one you can find a delicious, light snack, very easy to make and gluten free!!
Although there is a list of ingredients in the recipe, the two main ingredients you need to have at home are Ricotta or Anari Cheese and eggs.  All the rest are herbs and spices.  You can omit the spices and herbs you don't like or add a few more...  Either way I am sure you will love every single bite of them! ----------------------------- Tasty Bites with Homemade Anari/Ricotta Cheese (Gluten Free) Makes 26
Ingredients 630gr Homemade Anari or Ricotta Cheese ¼ tsp ground cumin ¼ tsp ground nutmeg ¼ tsp anise seeds ¼ tsp curry powder (mild) ¼ tsp fennel seeds ½ tsp sweet paprika 1 tsp dry thyme 1 tsp dry oregano 1 tsp ground mint Salt Pepper 2 medium eggs ½ cup sesame seeds

How to make Anari Cheese (Ricotta Cheese)

Anari is a Cypriot cheese that we normally use in traditional recipes.  It has a white color and it is light  in texture. 
I always wanted to learn how to make it, and finally I managed to discover the recipe by mistake... Yes, by mistake!!  I found a Ricotta Cheese recipe and while I was trying to make Ricotta cheese I discovered how to make Anari cheese.
Here you can find the recipe I made.  It is so easy to make and I definitely recommend it to anyone who likes fresh cheese.

Ingredients 2½ liters cow pasteurized milk (3% fat) 300gr fresh cream ½ cup white vinegar ½ tbsp salt

Fish Chunks with Vegetables (Gluten Free)

Delicious, light and so easy to make, this recipe became one of my favorite fish recipes nowadays.
The combination of spices and herbs in this dish, create a unique flavorful combination.
You can serve it with steamed Basmati rice, mashed potatoes or pasta.  I usually have it plain, and it is superb! --------------------------------------- Fish Chunks with Vegetables Serves 6
Ingredients 1kg fish fillet (boneless) 2 tbsp olive oil 2 medium zucchini 1 red pepper 1 spring onion 1 tbsp dark soy sauce or tamari sauce 1 tbsp dry oregano 1 tbsp dry thyme 1 tsp sweet paprika Salt and Pepper to taste

1) Cut fish fillet into chunks and cook it with 1 tbsp of olive oil for 6-7 minutes. Set aside. 2) Cut vegetables into strips or small pieces, and cook with 1 tbsp of olive oil for 3-4 minutes. 3) Combine fish and vegetables; add the dry herbs and season with salt, pepper and paprika. Finally add soy or tamari sauce and stir gently. 4) Serve hot.

Best Indian Rice Recipe

Internet is back!!  I am back with a recipe given to me by my dearest aunt, Patricia.  Auntie Pat, was brought up in India.  She cooks the BEST Indian dishes I ever had and I am very proud to present one of the most delicious Indian rice recipes ever.  Thank you auntie for sharing your secrets with me and my fellow readers!!! ------------------------------------ The only changes I made to this recipe (due to my diet) was to use only 2 tablespoons of Greek Olive Oil instead of frying oil.  I also saute, instead of frying, two large onions instead of one.
Aunty Pat’s Rice Recipe Serves 8-10
