Pork Roulade Marinated in Orange Juice and Herbs, Stuffed with Apples, Leek and Onions

Happy Boxing Day Everyone!!
This was one of the dishes we had for Christmas lunch, yesterday.  This year instead of a turkey we had pork roulade.  
In my country, Cyprus, we usually have souvla, roast turkey and another 10 dishes for Christmas, as if this meal will be our last one :-)
The pork was very tender and the combination between the meat and the stuffing, added to the dish a smooth flavor.  It was perfect on its own. No need for a sauce.
Pork Roulade Marinated in Orange Juice and Herbs, Stuffed with Apples, Leek an Onions
12 Portions

1 flat piece of pork (45cm x 35cm)
1 tbsp Greek olive oil
Kitchen Twine

Marinade Ingredients
1 liter orange juice
3 tbsps Scotch Whisky (White Horse)
1 tbsp orange zest
1 tsp fresh oregano, chopped
1 tsp fresh thyme, chopped
1 tsp fresh curry, chopped
1 tsp fresh rosemary, chopped
1 small red onion, finely chopped
1 tsp meat tenderizer
1 tsp ground black pepper
1 tsp curry powder
½ tsp cumin
½ tsp clove powder

Stuffing Ingredients
1 tbsp Greek olive oil
½ leek, finely chopped
1 medium red onion, finely chopped
1 medium white onion, finely chopped
2 small apples, chopped
1 tsp of ground cinnamon
½ tsp of ground black pepper
½ tsp of salt
2 slices of white bread, roughly chopped

Preparation Method
1. Lay pork on a deep large pan; add all marinade ingredients. Marinade over night turning the meat once.
2. Prepare Stuffing. In a large saucepan add olive oil, leek and onions. Sauté for a few minutes; add apples, cinnamon, pepper and salt and continue the process for another 5 minutes.
3. Stir in bread. Allow to cool for a few minutes.
4. Preheat the oven to 200ºC. Place a baking rack on a sheet pan.
5. Dry pork from marinate by using kitchen cloth. Lay pork on a flat surface; season with salt and pepper.
6. Add stuffing.   
7. Starting at one end, roll pork and tuck in any stuffing that tries to escape on the sides.  Tie the pork firmly with kitchen twine every 5cm to make a compact cylinder.
8. Brash roulade with olive oil and sauté in a large saucepan.
9. Sprinkle with salt and pepper, and roast for 2 hours covered with aluminum foil. Allow to rest at room temperature before carving.
10. Carve 1.5cm thick slices and serve warm.

"Κοπιάστε στην Κουζίνα μου" (από την Ήβη Λιακοπούλου)

Walnut and Almond Cake

NO, it's not Valentine's Yet...
Happy Birthday Dad!!!
Today my father celebrated his 63rd birthday and he looked better than ever.  
Two months ago he had a huge heart operation and he went through a lot of trouble.  
I was very pleased to see him today look healthy and happy, surrounded by his loved ones. His close family, cousins and friends were invited for lunch and he prepared barbecue for us.
This is his favorite cake so I had to do the best I could. 

Walnut and Almond Cake

Cake Ingredients
1 cup granulated sugar
6 large eggs
½ cup peanut oil
¼ cup all purpose flour
1 cup fine semolina
1 tsp baking powder
1 tsp cinnamon powder
1/8 tsp clove powder
1 cup walnuts, chopped
1 cup almonds, chopped
1 tsp vanilla sugar

Syrup Ingredients
1½ cup granulated sugar
1 cup water
½ cup fresh orange juice
Orange zest, big pieces
1 cinnamon stick
2 cloves

Ganache Ingredients
100gr dark chocolate
100gr milk chocolate
100gr fresh cream
10gr butter
¼ tsp almond essence

Preparation Method
1. Preheat oven at 180ºC.
2. Prepare syrup.  In a small pan add all syrup ingredients and cook, at medium heat, for about 12 minutes. Allow to cool.
3. Using an electric mixer, beat sugar, eggs and vanilla for 8 minutes; gradually add oil and continue beating for another 30 seconds.
4. In a bowl, mix the rest of the cake ingredients. With the help of a wooden spoon mix the dry ingredients with the egg mixture.
5. Poor cake mixture in a rectangular silicon pan (25cm x 30cm) and cook for 40 – 45 minutes.
6. Remove cake pan from the oven and poor in it the syrup. Allow to stand for 20 minutes before removing the cake from the pan. Allow to cool completely.
7. Prepare Ganache. Bring fresh cream to a boil. Stir in chocolates and butter and incorporate well; then stir in the almond essence.
8. Poor ganache on top of the cake and refrigerate over night.

Healthy Baked Roast Chicken

Healthy Baked Roast Chicken
4 Servings

1 chicken (2kg)
1 red onion, chopped into small pieces
1 tbs fresh thyme, chopped
1 tbs fresh oregano, chopped
1 tbs fresh rosemary, chopped
1 tbs garlic (crashed)
1 tbs ginger, chopped into small pieces
1 tsp curry powder
1 tsp black pepper
1 tsp salt

1. Separate the chicken skin from the flesh without removing it (use your fingers).
2. Mix spices and herbs. Place the spices/herbs mixture between the flesh and the skin.
3. Cover with a non stick baking paper and then with aluminum foil. Keep it in the fridge for at least 3 hours or better overnight.
4. Preheat oven to 200ºC. Place a wire rack in an oven pan and on top of the wire rack place the chicken.
5. Cover the pan with a baking paper and then with aluminum foil and cook for 1½ hours.

Barbecue Day

In Cyprus we love barbecue.  We usually have "souvla" or "souvlaki", but last Sunday we decided we wanted something different.  The weather was perfect so we enjoyed a lovely barbecue picnic. 

I made some burgers using pork and beef, fresh herbs from our garden and spices.  The pork chops were marinated in soy sauce, herbs and garlic.

The meat was seasoned with sea salt and black pepper.

We usually buy halloumi cheese but this one was my mum's creation!!  Simply delicious!

Organic Peppers stuffed with Cheese

Peppers stuffed with Cheese
Makes 12 medium peppers

12 medium organic peppers (unseeded)
Oil spray

Cheese Mixture Ingredients
150gr Fetta cheese
150gr unsalted Anari cheese (or Ricotta cheese)
1 large egg
1 tsp curry powder
½ tsp black pepper
1 tsp fennel seeds

Preparation Method
1) Preheat oven at 200ºC. 
2) In a large bowl mix all ingredients, and with the help of a small teaspoon fill the peppers with the cheese mixture.
3) Place the stuffed peppers in a 20cm x 20cm square Pyrex, and spray them with oil.
4) Cook for 20 -25 minutes.

Ashtray Birthday Cake

A chocolate fudge cake with a rich chocolate filling and orange buttercream on top, covered with homemade fondant
I tried to create the marble effect on the ashtray. I used a different recipe for the buttercream this time. Instead of using icing sugar I used sugar syrup and this time I used egg-yolks as well. The buttercream texture and the taste were perfect, but it was difficult for me to apply it on the cake, since it was too soft.
Yes!  The cigar was made of fondant, and the ash was  edible silver and pearl dust. It looks real, doesn't it?

Hello Kitty Birthday Cake

This cake was made for two cute sisters, Marissa and Korina.  The Hello Kitty figure was made with Fondant icing.  The rest of the cake was decorated with fresh cream. The actual cake was made with biscuits, butter, cocoa powder, icing sugar, milk, eggs and brandy.

Date and Almond, Square Cake

It’s been ages since I last posted a cake recipe. Yesterday I had a million of things to do but I was feeling I had to do something for you as well. 
I decided to create a date/almond cake that would be easy to prepare, and perfect with a cup of tea!

It took me approximately 5’ minutes to gather all ingredients and 10’ minutes to prepare the cake. Very easy, isn't it?


Date and Almond, Square Cake
12 Servings

1/3 cup peanut oil
90gr unsalted butter
¾ cup cane sugar
1 tsp vanilla essence
2 small eggs
1½ cup all purpose flour, sifted
1 tsp baking powder
¼ tsp baking soda
1/2 tsp cinnamon
¼ cup fresh milk (2% fat)
150gr dates (19-20 dates) pitted and chopped into small pieces
½ cup (60gr) almonds, chopped

1. Preheat the oven at 170ºC.
2. Melt the butter, oil, sugar and vanilla in a medium sized saucepan.
3. Remove from heat and let it cool.
4. Add eggs and mix in well. Stir in flour, baking powder, cinnamon and baking soda. Add milk and mix lightly with a fork or a small spatula.
5. Add dates and almonds. Mix lightly.
6. Bake in a square pan (20cm x 20cm), for approximately 35’ minutes.

Serve with a cup of tea or coffee!!

My Cute, Lazy Birthday Cake

Tomorrow is my Birthday.  Months ago I made plans of preparing a huge, fancy, glamorous birthday cake for me.  As usual, when the time comes for me to prepare the cake, I feel so bored I do not even bother.  
Last year I pushed myself in doing a suitcase cake. I guess I wanted to make a statement :-)!
This year though, I felt I owe it to myself to be a bit more relaxed on my birthday. I am sure I will not be able to make it, but at least I did not get tired in preparing my birthday cake.  
No frosting, no leveling, no filling, just a simple decoration that made my kids say WOW!!  
A ladybird, a daisy and a butterfly on a mountain :-)!  Cute isn't it?

Tomorrow a dearest friend of mine, Leonidas, will celebrate his birthday as well.  This cake is for him too!! 
Happy Birthday Leonidas! I hope we will be celebrating together our birthday soon!!

Little Prince Christening Party Theme

After a long, wonderful and relaxing weekend at Protaras I am back with a new post.
Two weeks ago, little Andreas was christened.  The ceremony took place at Omodos, a beautiful village 30’ minutes away from Limassol.
The theme of the christening party was “Little Prince”.  There were about 200 guests invited to the party and I have to say that we all had a great time!!
I prepared a three tier christening cake, which was decorated with fondant.  It was a chocolate fudge cake, filled with chocolate cream and fresh organic strawberries. 
Vanilla flavoring, with fresh organic strawberries and chocolate fudge cupcakes were given to each guest as a treat.  All were decorated with fondant icing.
This cake was decorated twice. I did not like the way it looked the 1st time, so I decided to make a new one.  I liked this one.  I hope you like it too!

I started decorating the cupcakes at 8:00 o' clock in the morning, and finished at 9:15' at night.

 Each guest was offered a cupcake.
 A traditional sweet made with almonds and sugar was given to each family as well.
Cupcakes, marshmallows, candies and lollipops were all over the place!  Kids were so excited!
