Doll Birthday Cake in Purple and Pink

This doll cake was made for a little girl called Chryso.

Her mother told me that she wanted the doll to be dressed into light purple and pink colors.

I tried to create purple by combining red and bleu colors, but somehow that did not ended the way I wanted so I ran into the store and I bought a ready made Wilton color.
My first thought was to make the dress purple and use pink only for the upper part of the dress, but then I thought that the doll would look a bit dull and I decided to use more pink than purple.
The next time I make a doll cake I think I will try to use fondant icing. I am not sure whether this will be easier or not, but I truly believe I should give it a try too!!

Cupcakes for the Final Day of Pre-School

On the 15th of June my kids finished pre-school. All parents got a notice from school asking us to bring some snacks so the kids could celebrate their final day at school. I decided to make cupcakes for all the kids at school, so since that was a huge project I asked from my kids to help me.

They were thrilled with the idea (as usual)!  So, I prepared the cupcake dough and the kids prepared the papers for the cupcakes.

I used a cookie spoon to fill them and I baked them for 15’ minutes at 180ºC.

1/3 of those cupcakes were decorated with melted marshmallows and Wilton sprinkles. The rest were decorated with rolled fondant. I used strawberry jam as glue, so the fondant would stick on cupcakes.

I am sure you are wondering about the cupcake recipe. Well, the sad part is that I will not give you my secret cupcake recipe, but the good part is that you can use any cake recipe that you like.

If you decide to make your own cupcakes I have a chocolate cake recipe and an orange cake recipe in my blog that I am sure you will like a lot.

When my kids came back from school they told me that their friends liked the cupcakes a lot and they were asking for more… :-). I was so pleased to hear that, because as you all know, kids always express with honesty their thoughts and feeling…

Mini Mouse Birthday Cake

This cake was made for two little sisters, Georgia and Despina.

It is a chocolate cake made with Cadbury Cocoa powder, biscuits, pure unsalted butter, icing sugar, eggs, milk, vanilla sugar and brandy.

The decoration was done with rolled fondant, buttercream and fresh cream. The mini mouse design was ready made. At the beginning I thought that a buttercream transfer would be a good option, but since now is summer in Cyprus I abandoned that idea…

Biscuit Flower Pots filled with Chocolate Cream (Video included)

One of my kids loves truffles or “troufes” as we call them in Greek. The ingredients that I normally use to make those truffles are the same as the Flower Pots Ingredients in this recipe.

Few days ago my son wanted me to make troufes for him, so I thought that I could experiment with a new dessert, and both my son and I could be happy with the results (if everything went fine, that is…).

The end result is what you can see in this post. Not only my son, but all the family was pleased with the Biscuit Flower Pots. You can try making these pots with your kids. It is an easy process that will make them creative and happy at the same time.

Biscuit Flower Pots filled with Chocolate Cream
Makes 16 Flower Pots

Flower Pots Ingredients
300gr Morning Coffee biscuits (or Petit Beurre biscuits)
100gr raw almonds
100gr powder sugar
100gr Cadbury Cocoa Powder
½ cup of fresh milk
25gr unsalted butter
1 tablespoon brandy
16 small silicone cups

Flower Pots Preparation Method
1) In a food processor, process biscuits until fine; then repeat the same process with the almonds.
2) Add butter to the milk and heat it in the microwave until the butter is completely melted. Allow to cool and add the brandy.
3) In a big bowl combine all ingredients and mix until well blended. (It will be a sticky mixture.)
4) With the help of a teaspoon cover the interior sides of the silicone cups.
5) Refrigerate for at least an hour. Then remove the mixture from the silicone cups and lay the biscuit cups onto a tray. Return them to the refrigerator until the chocolate cream will be ready.

Chocolate Cream Ingredients
120gr Candy Minis (or any other milk chocolate)
50gr dark cooking chocolate
½ cup fresh cream
1 cup fresh milk
1 tablespoon corn flour

Chocolate Cream Preparation Method
1) Cut the candy minis and dark chocolate into small pieces; add the fresh cream.
2) Melt them in the microwave at high temperature for 1 minute. Stir with a spatula until well combined.
3) In a casserole put the fresh milk and dissolve in it the corn flour; add the chocolate mixture and cook in medium heat until the chocolate cream starts to bubble. Do not forget to stir constantly.
4) Cover the cream with clean film and allow to cool completely.
5) Refrigerate for 1 hour; with the help of a hand whisk beat the cream until it forms a smooth texture.

Flower Pot Final Preparation
You will need:
- 2 teaspoons, or
- a Wilton decorating bag with Wilton tip No. 195
- Wilton Sprinkles

With the help of two teaspoons or the decorating bag, fill the biscuit pots with the chocolate cream and then decorate them with the sprinkles.

You can serve them immediately or refrigerate them for later. Since there is no egg in the recipe they last for at least a week.

How to make Gumpaste Flowers

Today I bought a new set of flower cutters, so as all kids do I wanted to use them immediately :-).

I made quite a few daisies and some flower leaves, which I think I will use in decorating a birthday cake.

It is easy to use gumpaste as long as you work fast. You can make it using a traditional gumpaste recipe or by incorporating gum tragacanth into your fondant.

I find Tylo powder a quick and easy way to form gumpaste. Below you can read what I used to make my flowers.

Gumpaste Flowers

You will need:
200gr fondant (different colors)
1 teaspoon Tylo powder
Flower cutters
Wilton Rolling pin
1 toothpick
1 cotton bud
Wilton colors

- For every 200gr of fondant you will need 1 teaspoon of Tylo powder.
- Tylo powder makes fondant become hard, so you have to work fast.
- Incorporate the Tylo Powder into the fondant and cover with clean film.
- Use the rolling pin and flower cutters to form the flowers.
- Remove the gumpaste from the cutters with the use of a cotton bud or a toothpick (cotton bud works better).
- You can use them immediately or after several days.
