A Tart You Will Never Forget!!

This is my favorite tart recipe. The crust and cream were adopted from Mr. Stelios Parliaros baking program “Glykes Alchimies”. Mr. Parliaros is my favorite confectioner. I have two of his books, and believe me, whatever he does is a success. His sweets are like poetry!!!
I used one apple, one pear, one orange and one strawberry for my final decoration. The final addition to the tart was one or two tablespoons of pistachio nuts.
I do not like using any type of gel on top of this sweet. I find the taste of the fruits much better than the typical gel they usually use on top of tarts.
Since I am not sure whether I can share this recipe with you I will just add a link to Mega TV and Glykes Alchimies. The program is in Greek but I am sure the recipes can be found in English as well.

Gluten Free Chicken Pie

This is an easy and quick recipe that combines meat, cheese and vegetables. I wanted a pie without using flour so I decided to give this pie a try.

Chicken, Peas and onion in the fry pan.

All ingredients in the Pyrex

All ingredients including fresh cream and beaten eggs.

Topped with Anari Cheese or Parmesan Cheese.

Cooked and ready to be served.

Gluten Free Chicken Pie
Serves 6

3 tablespoons of Greek olive oil
1 medium onion, chopped
3 chicken breasts cut into pieces
200gr peas
200gr mushrooms
4 large eggs
½ a cup of fresh cream or milk
Salt & Pepper
Anari or Parmezan cheese

Chocolate Chip Cookies

I am sure you all know what a chocolate chip cookie is. I am almost certain that most of you tried to make some of these cookies at least, one time in your life.  The only reason I posted this recipe is because my husband and kids never have enough of these cookies, so I thought, that this is a good opportunity to share my recipe with all of you.  Try it. I am sure you will love them.  For those who are on a diet I have to be honest... Making this recipe is not a good idea :-)!!!
Makes about 30 cookies

2¼ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon baking powder
250gr unsalted butter at room temperature (I used kerrygold butter)
1/3 cup light-brown sugar (or dark brown sugar)
1½ cups caster sugar
1/3 teaspoon salt
3 teaspoon vanilla extract (or vanilla essence)
2 medium eggs
1½ cups semisweet chocolate chips
½ cup milk chocolate chips

1) Preheat the oven to 175ºC (350ºF).

Fruit Ice Cream in Minutes!

For the last year or so, I am on a diet. So I always try to find ways to satisfy my appetite with delicious, healthy and tasty desserts. Tonight I was craving for ice-cream, so I thought I will try something new. I opened the fridge and I saw yogurt, apples, pears and blackberries. My ice-cream was almost done!!

One pear, one apple, 15 blackberries,200mg yogurt, 2 table spoons of vanilla flavor or essence and 2-3 tablespoons of honey combined together in a blender. Then 10 minutes in the freezer and 5 minutes in the ice-cream machine.

The ice cream is almost ready... Not to worry about sugar, fresh cream or added unhealthy ingredients.  An ice cream perfect for everybody!!


Easy Cupcakes, with a Greek touch!!

I love cupcakes because they give you the possibility to decorate each and every one of them in a different, unique, way. I always decorate them with the help of my kids, and I have to admit that most of the time they are more creative than I am :-)

A few days ago I decided to try a basic orange cake recipe, but with a variation. I wanted to add in the cake mixture a Greek touch. Masticha was the 1st thing that came in my mind. I searched through my cupboards and I found a small wooden box I bought from Crete last April, while we were there for a wedding. In the box I found masticha!!! The magic ingredient as I call it. But that was not enough for my cupcakes so, I opened the fridge and there was a bottle of masticha liqueur.
The next thought was olive oil. So I thought I will replace butter with olive oil, and there was my Greek Cup Cakes recipe!!
